I really don't know what this is called but what it tasted like was mochi outside or "yoown" filled with pork and mung bean with green onion/fried onions on top. It also came with a sweet fish sauce. So savory and delicious. I'm going to try making this when I get a few days off in a row. We tasted this at the Saigon Mall in Garland, Texas. (pic taken with my new rebel t2i)

Thyca conference 2010 Irving, Texas (close to Dallas!)



Just a little note..had a weekend trip to Dallas for the Thyca Survivor's Conference. It was fantastic. I met a lot of other thyca survivors and had a great time learning about my disease. I feel more empowered now and glad that I went. Thank You Mom for taking the trip with me to learn more about thyca. It is a journey, and I know I'm not alone. My biggest fear was not knowing when or what.. I know now how important it is to keep stress on the down low. How do I do this? Me time.. for this weekend it was shopping through hobby lobby. I wish we had one of those near me. It was so much fun!

Super Moist Apple Cake

Super Moist Apple Cake--My sis Nicole made an apple the cake last week, and my husband wished he had brought some home..it was that good. I tweeked the recipe I found on epicurious. It's made with whole wheat flour, gala apples(on sale @ safeway), sugar, brown sugar, baking soda/powder/salt, eggs, butter, cinnamon, pumpkin spice, nutmeg and berry apple sauce(took from the kids snack stash) and vanilla.

  • 3 cups whole wheat flour
  • 1 3/4 teaspoons ground cinnamon
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pumpkin spice
  • 1/4 teaspoon freshly grated nutmeg or ground nutmeg
  • 1/4 teaspoon baking soda
  • 1 cup (2 sticks) unsalted butter, room temperature
  • 1 1/4 cups sugar
  • 3/4 cup (packed) golden brown sugar
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 2 tablespoons frangelica
  • 1 1/2 cups berry apple sauce
  • 3 Gala apples (13 to 14 ounces total), peeled, halved, cored, cut into 1/3-inch cubes
bake at 350 degrees for 40 minutes til the toothpick came out clean

Making pumpkin pie this year?

These pumpkin pies are from the 78 lb pumpkin that I grew and harvested in January. I tried growing pumpkin this year, but no luck:( ..But anyways..made 12 pumpkin pies non stop and still had a ton of pumpkin left. I also made pumpkin ravioli and pumpkin soup..and then I was pumpkin'd out.
Thought I'd post something with food..since my blog is "cookingRn"..lol

Using the create a critter cartridge, More punnilicious my pink stamper stamps, paper by dcw?, acrylic beads and some ribbon that I bought @ a flea market! Thanks Kinderstampo for the acrylic beads idea. NOw I have beads to last me a lifetime.

Made this card after watching "made by Momo" on youtube. It's a flower pot card that has a pull out where you can write sweet notes.

Used create a critter cart, some snappy ribbon from Michaels, My pink stamper stamps and crop a dile to put eyelets in. Card is 4" by 8" and scored @ 4" and 6". The green paper is 3 3/4 and 3 3/4". The card fits into an A2 envelope. Got this idea from Kinderstampo blog hop. Sorry I forgot who! will pay attention to who I got the idea from!!
This is one of my favorite Carts--Hello Kitty Greetings. It's so simple and easy to glue the pieces together
My first bind it all book. I used recycled cereal box for the chipboard, covered it with paper and made some chip board using recycled cereal boxes too! Just used regular copying paper for the pages inside. My daughter "J" is using it to practice writing. She just started writing her own name!!:)

I spent the whole day crafting. Didn't get that much done, but I did come up some cards. Bought some more @ Michaels! I couldn't help it! All the cardstock was 40% off..so nice.

Heading to Kinderstampo's blog hop

HI! What a beautiful day it is here in Sunny Foster City, CA. I am just starting to enjoy my day..hubby took J to the Clone Wars Exhibit @ the Zeum in San Francisco. So it's my day!! all to myself! Thank You Hubs! So the plan for today is to blog hop and work on some cards! Oh and I finally made a bind it all notebook. It's for J, so she can practice writing letters. She just wrote her full name by herself, so proud of her. It's actually the 2nd bind it all notebook. The first one I made pretty quick for my patient and his family, but forgot to take a pic.

To a beautiful day ...maybe I'll have time to run to Michaels..
