blog candy from Kinderstampo

I really don't know what this is called but what it tasted like was mochi outside or "yoown" filled with pork and mung bean with green onion/fried onions on top. It also came with a sweet fish sauce. So savory and delicious. I'm going to try making this when I get a few days off in a row. We tasted this at the Saigon Mall in Garland, Texas. (pic taken with my new rebel t2i)

Thyca conference 2010 Irving, Texas (close to Dallas!)



Just a little note..had a weekend trip to Dallas for the Thyca Survivor's Conference. It was fantastic. I met a lot of other thyca survivors and had a great time learning about my disease. I feel more empowered now and glad that I went. Thank You Mom for taking the trip with me to learn more about thyca. It is a journey, and I know I'm not alone. My biggest fear was not knowing when or what.. I know now how important it is to keep stress on the down low. How do I do this? Me time.. for this weekend it was shopping through hobby lobby. I wish we had one of those near me. It was so much fun!

Super Moist Apple Cake

Super Moist Apple Cake--My sis Nicole made an apple the cake last week, and my husband wished he had brought some home..it was that good. I tweeked the recipe I found on epicurious. It's made with whole wheat flour, gala apples(on sale @ safeway), sugar, brown sugar, baking soda/powder/salt, eggs, butter, cinnamon, pumpkin spice, nutmeg and berry apple sauce(took from the kids snack stash) and vanilla.

  • 3 cups whole wheat flour
  • 1 3/4 teaspoons ground cinnamon
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pumpkin spice
  • 1/4 teaspoon freshly grated nutmeg or ground nutmeg
  • 1/4 teaspoon baking soda
  • 1 cup (2 sticks) unsalted butter, room temperature
  • 1 1/4 cups sugar
  • 3/4 cup (packed) golden brown sugar
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 2 tablespoons frangelica
  • 1 1/2 cups berry apple sauce
  • 3 Gala apples (13 to 14 ounces total), peeled, halved, cored, cut into 1/3-inch cubes
bake at 350 degrees for 40 minutes til the toothpick came out clean
